This trail mix will give you the energy to start pounding the pavement- it's delicious too!
Ingredients:
1 cup whole almonds, roughly chopped
1/2 cup pecans
1/3 cup plain oats
1/3 cup pepitas
2 tbs honey
1/2 tsp cinnamon
1 cup dried cranberries
1 cup dried apricots, chopped (or other dried fruit)
Method:
1. Heat oven to 180ºC. Place nuts, oats and pepitas in a bowl. Drizzle with 1 tbs honey, 1 tsp oil and stir through with cinnamon.
2. Spread nuts evenly over tray and bake in oven for 10-15 mins.
3. Cool, then add remaining honey and dried fruits. Pour in to a clear packet and seal with a festive ribbon- ready to hit the mountain trail!
